Copper Cupcake is run by Shannon Loucks, who grew up in the San Francisco Bay Area. She attended culinary school at the California Culinary Academy and apprenticed under a two Michelin star chef, working as his pastry chef. She then went on to manage corporate cafes for internationally known technology companies before relocating to Louisville in mid-2010. It is in Louisville that she decided to venture out and open Copper Cupcake, which began with working out of the Jeffersontown farmer's market and off of www.coppercupcake.com. Anticipating opening a brick and mortar storefront in 2012, Shannon cannot wait to have all of the Louisville area enjoy her delightfully decadent treats!
